The more than centennial history of wine cellar Paitin started in 1796, when Benedetto Elia purchased a very beautiful property from Luigi Pellissero.
The first Barbaresco wine was bottled in 1893.
At present Secondo Pasquero is working in the cellar together with his sons Giovanni and Silvano, who also opened, in1997, a farmhouse.
Very good bottles are produced from 17 hectares land.
The favourite piece of wine cellar is Barbaresco Sorì Paitin Vigne Vecchie, full garnet red coloured, smelling of red fruit, violet, liquorice and cacao.
It expresses good tannin in mouth and a rather powerful structure, which gives this big wine a striking persistence.
Barbaresco-base is anything but easy, since it shows a really satisfying and intriguing complexity, produced by its dark violet reflexes and sour cherries perfumes.
During tastings, also Barbera d'Alba Campolive 2001 was appreciated, with its carmine red shade.
It is strongly fruity in mouth, with a vanilla note, but an acid vein makes it agreeable.
The “Langhe Paitin” is mainly produced from grapes of nebbiolo, barbera and cabernet sauvignon; it’s appreciable for its fruit and pepper full perfumes, enriched with a rather powerful taste, overflowing with pulp.
Nebbiolo d'Alba Ca Veja is also a well structured wine, while Arneis Vigna Elisa, Barbera d'Alba Serra Boella and Dolcetto d'Alba Sorì Paitin are worth tasting for their pureness.
